Squash, Squash, and more Squash

Benjamin has been doing a fine job picking the Squash:)

What to do with all that yellow summer squash?

Peterson’s Summer Squash Casserole:

Ingredients:

4 medium yellow summer squash

1/2 onion

8 tbsp butter or margarine

4 hard cooked eggs, chopped (use B&J eggs of course)

1/2 cup shredded Cheddar cheese

2 packs of saltine crackers

2 cups milk

Garlic salt, reg sea salt, pepper

Bacon Bits or 4 cut up strips (pre cooked)

Preparation:

Fill a medium to large sauce pan up with water about half way, cut onion into 1/4 pieces (to be removed later), add garlic salt, pepper, and 2 tbsp of butter. Mix while heating up. Cut squash into 1/4″ to 1/2″ slices and add to pan, cook covered for about 10 minutes (until squash is tender).

While the squash is cooking get a large mixing bowl. Melt about 6 tbsp of butter in microwave in a small bowl. In large mixing bowl add melted butter, 2 packs of crackers, eggs, bacon, and 1/2 to 1 cup milk. Mix together.

Get a 3qt casserole dish and put 1 cup milk on bottom. Drain squash and put into casserole dish, take out onions (if you wish). Add your cracker/egg/bacon mix. Put your shredded cheddar cheese on top. Bake at 375 degrees for about 25 minutes.

Let it cool down and then enjoy

Review: The Very First Noel

The Very First Noel has become one of the Peterson family Christmas time favorites. This 23 minute animated cartoon is from the makers of the hit DVD series BOZ (another Peterson family favorite). With Andy Griffith as the voice of Melchior (one of the Three Wise Men). He narrates the story of his travels in search of a magnificent star pointing him to a newborn King. The animation has good humor for all and the music is great. It will keep the attention of you’re 4 year old for sure!! We really enjoy watching our children watch this DVD!!

The boys (hannah did not ride this year) had a good time riding the combine and tractor this year. Been a late harvest this year, but thank God for the good weather the last few weeks so the farmers can get their crops in.

New Chicks!

We just recently hatched out our own chick’s right from our own flock. We had 13 of 16 chicks hatched out, which we thought was pretty good considering we only hatched out 7 of the 14 buffs we got online from a professional breeder. This time we added a fan to the incubator, which helped maintain the humidity level better.

The yellow and Black chicks our a SHAVER Rooster with a White Rock Hen.

The Red Chicks are a Rhode Island Red Rooster with a White Rock Hen. These are sometimes called a Golden comet or Red Star chickens

The black chicks are one's (eggs) we took out of the entire flock to see as a suprise what we got. I think their and Autralorps with a Shaver (barnyard chicks).

If anyone is interested in buying a few the boys will let them go for $1.50 each. First come First serve and the buyer picks (no returns).
